Assessing the impact of Bos taurus x Bos indicus crossbreeding and postmortem technologies on the eating quality of loins from pasturefinished young bulls

This experiment aimed to evaluate the effects of Brahman crossbreeding and postmortem technologies (electrical stimulation vacuum aging) on eating quality loins from pasture-finished bulls. Fifty yearling bulls representing five Brahman-influenced types (n = 10 each): (BRAH), F1-Angus (F1ANG), F1-Chianina (F1CHI), F1-Romosinuano (F1ROM), F1-Simmental (F1SIM) were supplemented pasture until reaching a desirable conformation at suitable live weight ca. 480 kg. All carcasses classified as “Bullocks” according U.S. standards. Carcass’s right sides subjected high-voltage electrical (ES) while left not stimulated (NOES). Longissimus lumborum (LL) steaks ES NOES allotted either aging control treatment for 2 d (NOAGING) or (AGING). LL evaluated Warner-Bratzler shear force (WBSF) sensory traits by trained panelists. No differences in WBSF, juiciness, flavor ratings detected among breed (P > 0.05). Sensory tenderness-related varied little with type < Steaks F1ANG received higher muscle fiber tenderness, overall amount connective tissue, differed 0.05) those F1ROM F1SIM which lowest ratings. Bullock more responsive ES+AGING WBSF reduction tenderness than other treatments greater proportion (72%) “tender” (WBSF 40.1 N) AGING (48%), (36%), NOES-NOAGING (24%) samples 0.01). Tenderness bullock loin is marginally improved crossbreeding; therefore, application necessary ensure tenderloin steaks.
